Tasting note 03/12/2016

  • Visual phase: Cherry red color with bright reflections in the range of violet.
  • Nose: Red and black fruit, with hints of scrubland and lightly toasted mark a nose with a grateful evolution.
  • Palate: Unctuous, structured and enveloping, full of flavors. Its sweet and ripe tannins and its creaminess make it a tamed, round, large and tasty wine.

Serving temperature: 16- 18 ºC.

Vineyards

Varieties used: Tempranillo (95%) and Merlot (5%). 1,750 kg (1,665 kg of Tempranillo and 85 kg of Merlot) are collected. All of them from the more than 10 hectares of family vineyards, 25 to 102 years old.

Soils: Predominantly poor and loose soil with good drainage structures with sandy, silty and clayey loams areas with calcareous concretions.

Harvest: Performed on October 5 with crescent moon. It was harvested and selected by hand in boxes of 10 to 13 kg.

Elaboration

Barreling on October 5 by gravity with careful stripping and manual selection of grapes. Barreling at low temperatures producing a maceration of 30 hours. Spontaneous fermentation with indigenous yeasts. 3 manual bazuqueos between 5 and 8 minutes during maceration of 40 days. Descube on October 31 taking advantage of the crescent moon, for the start of malolactic fermentation, carried out in French oak barrels. Malolactic fermentation ends on November 14, coinciding with the waning moon, then transferred to barrels for aging.

Vintage: 2014

Cold and rainy winter, with temperatures and rainfall in the mean values recorded in the area. There was a normal sprouting free of frost. It got to the summer with water reserves in the roots. In summer there were the so characteristic thermal alternations between day and night in the area, arriving to collect thermal jumps of up to 35 ° C. The fruit came to an optimal state of healthy and free from unforeseen weather such as frost or hail collection.

  • Production: 1,050 liters spread over 1,400 bottles of 0.75 liters.

Open the bottle 10 minutes before if possible. Ideal serving temperature is 16 to 18 ° C.
