Tasting note 03/12/2016

  • Visual phase: Dark and bright cherry with a deep layer..
  • Nose: High aromatic intensity, once served appear memories of Russian hides and vegetables. After an evolution of the wine in the glass, it gives way to a variety of fruits, where aromas of black plums and cherries predominate, with notes of roasted aromas and Chinese ink.
  • Palate: Wine of great initial impact, powerful and meaty, highlighting an unrivaled length. The structure fills the mouth with sensations of powerful tannins, accompanied by aromas of red and black fruits. Aftertaste with notes of fruit compote.

Serving temperature: 16- 18 ºC.

Vineyards

Varieties used: Tempranillo (90%) and Merlot (10%). 850 kg (765 kg of Tempranillo and 85 kg of Merlot) are collected. All of them from the more than 10 hectares of family vineyards, 25 to 102 years old.

Soils: Predominantly poor and loose soil with good drainage structures with sandy, silty and clayey loams areas with calcareous concretions.

Harvest: Performed on October 5 with crescent moon. It was harvested and selected by hand in boxes of 7 kg.

Elaboration

Barreling on October 5 by gravity with careful stripping and manual selection of grapes. Barreling at low temperatures producing a maceration of 32 hours. Spontaneous fermentation with indigenous yeasts. 2-3 manuals bazuqueos between 5 and 10 minutes during maceration of 25 days. Descube on October 31 taking advantage of the crescent moon, for the start of malolactic fermentation, carried out in stainless steel tanks. Malolactic fermentation ends on November 14, coinciding with the waning moon, then transferred to barrels for aging.

Vintage: 2014

Cold and rainy winter, with temperatures and rainfall in the mean values recorded in the area. There was a normal sprouting free of frost. It got to the summer with water reserves in the roots. In summer there were the so characteristic thermal alternations between day and night in the area, arriving to collect thermal jumps of up to 35 ° C. The fruit came to an optimal state of healthy and free from unforeseen weather such as frost or hail collection.

  • Production: 490 liters spread over 613 bottles of 0.75 liters and 20 bottles of 1.5 liters.

TIPS FOR YOUR ENJOYMENT

Open the bottle half an hour before if possible, serving carefully to enjoy its full potential. Ideal serving temperature is 16 to 18 ° C.
