Tasting note 03/12/2016

  • Visual phase: Clean, bright, cherry red color with cardinal edging live.
  • Nose: floral notes wrapped in a black and red fruit in season. It has marked balsamic aromas with a long background with roasted mineral and spicy memories.
  • Palate: In the mouth is friendly, spacious and elegant, with a balanced tannic structure, creamy nuances of being perfectly integrated flukes. It is a complex wine, long, delicate, with a freshness that highlights an incredible expressiveness in its finish. Aftertaste full of aromatic nuances and flavors that remind us of toffee and cherries in liquor.

Serving temperature: 17- 18 ºC.

Vineyards

Varieties used: Tempranillo (85%) and Merlot (15%). 3,600 kg (3,060 kg of Tempranillo and 540 kg of Merlot) are collected. All of them from the more than 10 hectares of family vineyards, 25 to 101 years old.

Soils: Predominantly poor and loose soil with good drainage structures with sandy, silty and clayey loams areas with calcareous concretions.

Harvest: Performed on October 11 with crescent moon. It was harvested and selected by hand in boxes of 7 kg.

Elaboration

Barreling on October 11 by gravity with careful stripping and manual selection of grapes. Barreling at low temperatures producing a maceration of 60 hours. Spontaneous fermentation with indigenous yeasts. 3 manuals bazuqueos between 7 and 10 minutes during maceration of 33 days. Descube on November 12 taking advantage of the crescent moon for the start of malolactic fermentation, carried out in French oak barrels. Malolactic fermentation ends on November 17, coinciding with the full moon, then transferred to barrels for aging.

Vintage: 2013

Rainy and mild winter, with minimum temperatures above the mean values, thus favoring an earlier bud break than usual. At the end of the cold spring heavy rains occurred. Hot and dry summer with average temperatures above mean values. There was a slight delay compared to previous vintages. Significant temperature changes between day and night, typical of the area, ideal for optimal concentration of polyphenols in grape skins.

  • Bottling date: 19th March 2015 (waning Moon end)
  • Production: 1117.5 liters spread over 1,450 bottles of 0.75 liters and 20 bottles of 1.5 liters.

TIPS FOR YOUR ENJOYMENT

Open the bottle half an hour before if possible, serving carefully to enjoy its full potential. Ideal serving temperature is 17 to 18 ° C.
