The process of preparation together with the qualities of the sheep milk determine a "biological" cheese of first quality, delicate, clean and with an excellent flavor.

This small factory generates about 10,000 kilos per year of cheese. A limited production, handmade and cared for.

A maximum of 40 pieces a day, 250 a week, the limit of the small healing chamber, in which the pieces remain between a month and a half and three months. Therefore, it is a semi-cured cheese. They do not have more aged cheese or cheese before six weeks of healing.

In this healing process the cheese is smeared in olive oil and carefully tumbled every two days on a chestnut wood tables. That is the secret of its simple but complex flavor.
