Bonito fishing takes place between June and October, being the best hours at sunrise and sunset. The bonito is a blue fish, and therefore with a higher fat content (approximately 6%) than the other lean fish. On the other hand, its fat is rich in omega-3 acids, with great health benefits:
Piquillo peppers are harvested in the Upper Ebro (Navarra) between September and November. For the preparation of this pâté, wood-roasted peppers are used, peeled by hand without using water.
